While I might not know what Extinction's new creature should be, I know where it should spawn: the Sulfur Fields. The Sulfur Fields represent one of the four quadrants of the map and yet there's not a single unique species that spawns there.
As Extinction is all about adapting for a post-apocalyptic Earth and all of Extinction's other creatures represent speculative-evolutions, I decided it would be prudent to limit myself to species that already have a propensity for surviving in sulfur-rich environments. Meet the Yeti Crab, based on the extinct Pristinaspina gelasina.

Yeti crabs are a pale crustacean whose limbs are covered in fine hairs, which it uses like nose-hairs to protect itself from harmful particles in its environment.
Encounter
An encounter with the Yeti crab would depend on the creature's size.
If the yeti crab has a more realistic size: Yeti crabs can be found subsisting in sulfur pools.
If the yeti crab falls into the category of ARK Giants: Yeti crabs are comparable to encountering a Karkinos in the depths of Aberration, and can be found lurking within caves and outcrops ready to ambush their lunch.
Domestication
Realistic-sized yeti crabs would be tamed via the Fishing Basket and would function as a living Gas Mask - providing their survivor with protection from environmental effects such as toxic fumes, smoke and radiation. As a candidate for Extinction, the environmental protection should at minimum apply to the Sulfur Fields and Wastelands.
Giant yeti crabs would be a knock-out tame that rewards you with a fearsome mount that is immune to toxins and other environmental hazards - while also granting immunity to their rider.
Both should have applications for transferring to other maps - good for Aberration and maybe the Island Swamp Cave? Well, the Giant Yeti Crab definitely wouldn't fit in the Island Swamp Cave.
A single new creature could fulfil both niches via multiple avenues. Adults could be gigantic and the females could be capable of spawning infants in the same manner as Giant Bee drones or Compy Friends - distinct from breeding infants, or as an alternative way of breeding/maturing. Alternatively, there could be significant sexual dimorphism between males and females - with the females being gigantic mounts and the males being shoulder-sized. While there is a precedent for female crabs being larger than male crabs, as well as significant sexual dimorphism in abyssal-depth sea creatures - this would be an ARKism.
